In Need of Zucchini Ideas
So, my sister in law and mother in law planted an entire row of zucchini and I was the recipient of 6 (HUGE) zucchini!! I was kind of excited, because I'm kind of in this freezing frenzy right now. So I shredded it. All of it. That is 27 1/2 cups of shredded zucchini. So, now I'm not entirely sure what to do with it. I'm putting this out there asking for recipes (breads, desserts, anything) that call for shredded zucchini. Your help and recipes would be much appreciated!!

Val I have a great reciepe for zucchini casserole. I made it just last week and shared it with some of the ladies at work and it was a big hit. I also got one from another lady I work with so I have two I can give you just call me and remind me and I will email it to you or give it to you next time I see you
We use zucchini in salads and in stir fry. :)
Wow, how fun! I would add it to spaghetti sauce and stuff like that.
