Valentine's, Potty Training, and Eating Well! Oh My!

This post is bound to be long. Sorry about that. I've just put it off long enough to have everything kind of pile up! So enjoy!
This is a Valentine's craft that I did with my Sure Cuts A Lot. Love it! If you would like one, you are totally welcome to it. Super easy to do and it is still saved on my computer!

Potty training is going great! Much, much better than I thought it would. We started 1 1/2 weeks ago and he took to it really well. He wears underwear all the time and has only had 4 accidents. And the good news is that they have only been in the day time. He hasn't had one accident during the night and doesn't wear a diaper or pull ups at night. We were seriously blessed to have such an easy child! The key to potty training...wait until they are ready. It has worked wonders for us! And the picture is just a recent picture of Jacob. He loves getting his picture taken as long as it is me or Joe. Funny kid!

And lastly, eating well. We had a Relief Society Meeting (Enrichment, Homemaking, etc.) on eating and cooking better. It was great and she had some really good tips and recipes that I thought I'd share.

~Make all of your fresh food accessible. Cut them up and put them in individual baggies. Makes for easy snacks. Don't buy the pre-cut veggies. They aren't as fresh.
~Make a menu (this has been easy for me, because I grew up with a mom that made bi-monthly menus, and I've been doing that since I got married. It is natural now to do that.)
~Drink at least 8 cups of water a day.
~Don't starve yourself. Eat 3 meals and 2 snacks a day at least. If you starve yourself, you are much more likely to overeat.
~When eating out, when you order your food, have half of it put in a take out container. That way you don't eat as much. (I have done this and it totally works!)
Some Yum-o recipes:
Baked Oatmeal
4 c. old fashioned oatmeal
1 tsp. cinnamon
2 eggs
1 c. craisins
1/4 c. brown sugar
1 tsp. salt
2 c. applesauce
2 tsp. baking powder
1 c. milk
1/4 c. canola butter
Combine all dry ingredients, then liquid and mix together. Bake in 9x13 pan at 350 degrees for 45 minutes. Cut into squares and freeze in sandwich bags. Take out of freezer, cook in microwave for 30 seconds and top with milk and cinnamon sugar.

Chicken Salad
1 can chicken or tuna
8 grapes, cut in half
1/2 of cucumber
1/2 apple
1 stalk celery
1 tbsp. light may
Mix together and eat in a pita. This is for one serving or on person.

Granola

And if you are anything like me, I have a problem with snacks. I just don't know what to have. So included, are some snack ideas that are good for you. Very helpful!
~Celery and carrots
~Apple with peanut butter
~baked apple w/cinnamon
~Granola with nuts
~Cottage cheese and fruit
~Yogurt and banana

Your picture is adorable! Is it on glass? Very cute!

Jacob is doing so good! What a big boy! Isn't it nice not to buy diapers!

I love the healthy eating tips - it is such a struggle to eat healthy snacks and meals - thank you for the good ideas and recipes! I am going to make the baked oatmeal, it sounds so good! Cole and I share a bowl of oatmeal every morning (he needs to have a healthy heart too...;0))!
